Bears have had their armour increased in 1.14. Based on the game file changes they will take around twice the damage or more to kill now. So unless you have a very powerful gun(Vaiga, LAR, M4A1, etc), I wouldn't recommend fighting one alone.
If you spot one, you can go prone and not move... It probably won't see you. If it sees you, it will only KO you and leave you with 2 bleeds while removing 50 health from you.
If you attack one, it will(9 times out of 10) not stop attacking you until you die. So it will continue to attack you while unconscious until you see the You Are Dead screen.
Most weapons didn't get a buff of x2 damage, so bears are more difficult to kill than they may have ever been in DayZ.
